No Bake Cookie Bites (without peanut butter)

No-bake Cookies without peanut butter – perfect healthy energy snacks for little ones and grown-ups alike. Made with carob powder (kid-friendly) and sweet plums (prunes), topped with some coconut flavor these cookie bites melt in your mouth.

Easiest 10 minutes NO BAKE COOKIES without peanut butter – you can shape them as bites, cookies or balls ( as I usually do). They are healthy ( see nut-free version below), boost your energy and did I mention quick and easy to make. My kids love to participate when we make these at home.

INGREDIENTS AND SUBSITUTIONS

  • Hazelnuts,  raw – or homemade baked for more intensive nut flavor. Substitute with whole grain oat flakes for nut-free version. Same amount.
  • Soft medjool dates pitted
  • Dried plums (prunes), pitted – or dried apricots are great too.
  • Full-fat coconut shreds, optional
  • Flax seeds, organic
  • Orange juice,  freshly squeezed – everything blends much better that way
  • Orange extract – for intensifying flavor
  • Carob powder for decoration,  optional – or raw cacao powder
  • Coconut flakes, for decoration –  optional too

HOW TO MAKE NO BAKE COOKIES – tips:

  • Chop nuts first, then add remaining ingredients. Otherwise they will not be cut equally.
  • Always add orange juice as the cookies bind together much better.
  • Wet you hands (lightly) when forming each cookie to prevent dough from sticking to your fingers.
  • Preserve in air tight container in the fridge up to 48 hours.

Equipment

  • 1 Blender/food processor

Ingredients
  

  • 1/2 cup hazelnuts raw
  • 5-6 soft medjool dates pitted
  • 6-8 dried plums (prunes) pitted
  • 2 tbsp full-fat coconut shreds
  • 3 tbsp flax seeds
  • 3 tbsp orange juice freshly squeezed
  • 2 drops orange extract
  • 1 tbsp carob powder for decoration optional
  • 1 tbsp coconut flakes for decoration optional

Instructions
 

  • Add nuts to food processor and pulse until finely chopped.
  • Then, place all remaining ingredients (except carob powder/coconut flakes for decoration) in food processor (blender). Pulse until dough forms and nuts It should be sticky.
  • Take the mixture out of the container and start forming small balls or cookies with your hands. Then, roll each into carob powder/coconut flakes. Enjoy!

Notes

SOFT & CHEWY: The softer your dates and plums, the better ‘dough’ consistency will form. Dates and plums act like combining agent for these bliss balls.
COCONUT: use  all-fat coconut shredsusually organic as they are much rich in coconut taste.
SUBSITUTIONS: Change plums with raw apricots if prefeed. Add almonds or walnuts instead of hazelnuts. 
NUT FREE: Use whole wheat oats as substitute for nuts in case of allergies.
