Easy Greek Spanakopita (tray)

Today I’m sharing a cherished family recipe for Greek spanakopita – the much-loved spinach and feta pie. It’s put together in a simple baking tray and baked until perfectly golden and crisp. We favor butter for its rich finish, though olive oil may be used instead with equally delicious results.

Behind the Bites

Spanakopita belongs to a long tradition of Greek pies, which date back to most likely ancient Greece, when people made simple flat pastries filled with wild greens, herbs, or cheese. These early pies were practical, portable foods for farmers and shepherds, and they relied heavily on whatever ingredients were locally available.

During the era of the Ottoman Empire, pie-making techniques evolved further, particularly with the introduction and refinement of phyllo (filo) dough, which became a defining feature of many Balkan and Middle Eastern pastries. Over time, Greek cooks adapted these techniques to local tastes, combining spinach with feta and fresh herbs to create the version of spanakopita we recognize today.

By the 19th and early 20th centuries, spanakopita had become a staple of rural Greek households, especially in regions like Epirus and Macedonia. It was often baked in large trays or wood-fired ovens and served as an everyday meal, a snack, or even a dish for fasting periods (with cheese or eggs omitted). Each region developed its own variation – some with thicker handmade dough, others with a higher ratio of greens or different herb blends.

In modern Greece, spanakopita remains one of the country’s most iconic dishes, found everywhere from village kitchens to urban bakeries, symbolizing a blend of ancient traditions, local agriculture, and centuries of cultural influence.

Ingredients and Substitutions

  1. Phyllo Dough – large rectangle thin sheets of fillo dough or homemade fillo sheets
  2. Spinach – fresh is best
  3. Eggs
  4. Feta cheese – or any type of white cheese in brine
  5. Butter – can be replaced with olive oil
  6. Spring onion – leeks or other greens like levurda, sorrel, etc. can be used

How to bake Spanakopita at home?

1st: In a large pot with lid sauté chopped spring onion and spinach in some butter. Then combine the eggs and crumbled feta cheese into a bowl. Add in the sauteed leaves and stir to make the filling.

2nd: Add in the sauteed leaves and stir to make the filling. Brush the bottom of the baking tray with butter and lay the 1st phyllo sheet on top. Brush with butter again.

3rd: Repeat for two more phyllo sheets. Then divide the filling in two parts and transfer the 1st half onto the layered and buttered fillo sheets. Distribute evenly.

4th: Repeat the buttering procedure for three of the remaining fillo sheets. Then layer with the second half of the filling. Butter the two remaining sheets and place on top. Bake until golden in a preheated oven.

An easy recipe for a flaky Greek spanakopita, prepared at home. Simply prepared on a cooking tray, this easy spanakopita recipe shows you how to make the savory Greek spinach pie at home – tips and step by step instructions included.

Equipment

  • 1 large cooking tray, preferably the size of the phyllo sheets

Ingredients

  • 8 phyllo sheets, rectangle shape
  • 3 large eggs
  • 350 g Feta cheese
  • 60 g spring onions
  • 500 g spinach
  • 100 g butter, melted

Instructions

  • In a large soup pan with lid add 2 tbsp. of butter and sauté chopped spring onions until golden. Then add cleaned (washed) spinach leaves and sauté further.
  • In a separate mixing bowl crack the eggs, add in the crumbled Feta cheese and sauteed spinach leaves.
  • Next, grease the bottom of the tray with melted butter. Should be well greased.
  • Then, layer one of the phyllo sheets at the bottom of the tray. Gently (with a kitchen brush) brush the phyllo sheet. Then, layer another one and repeat. Layer the 3rd one and again brush with melted butter.
  • Next, transfer half of the spinach-egg-cheese filling onto the 3 phyllo sheets and distribute evenly on top.
  • Then, layer with another phyllo sheet and again brush with melted butter. Layer two more phyllo sheets the same way.
  • Next, transfer the second half of the spinach filling on top of the phyllo sheets and distribute evenly.
  • Layer two more phyllo sheets on top, again separately brushed with butter.
  • Finally, bake in preheated oven, 180C/360F until the top is crispy golden. Cut immediately into squares and serve.

Notes

Tip: When brushing the phyllo sheets with butter be gentle, as they tend to break easily.
Filling: Divide the filling into two equal parts that go between the phyllo sheets brushed with butter. Butter can be replaced with olive oil.
*Depending on how generous you are with brushing butter onto the sheets, you may need more butter.
