Today we will be making a quick one – baked oyster mushrooms, the Mediterranean way. These Parmesan goodies are suitable as appetizer or side dish to meats and fish. We particularly enjoy them alongside my kid’s favorite meatloaf cakes – Mini Meatloaf cakes with eggs recipe.

Ingredients and Substitutions

  • Oyster mushrooms – regular variety, sold in most stores (at least across Europe)
  • Butter – melted, or substitute with olive oil
  • Parmesan cheese – freshly grated tastes best, if possible from Italy – Reggiano D.O.P
  • Breadcrumbs– fine breadcrumbs or gluten free if needed

How to cook oyster mushrooms

There are many ways to cook and enjoy oyster mushrooms. Today we’ll be baking them in the oven.

1st: Clean mushrooms, place onto baking paper and brush with butter.

2nd: Add Parmesan cheese. Cover each mushroom with the mix. Then bake in the oven with ventilation on.

Parmesan Butter Oyster Mushrooms (baked)

Easy, quick and healthy – these parmesan butter mushrooms are the perfect light appetizer.

Equipment

  • 1 baking tray
  • baking paper if needed

Ingredients
  

  • 300 g oyster mushrooms, cleaned
  • 2 tbsp. breadcrumbs, GF if needed
  • 2 tbsp. grated parmesan cheese
  • 4 tbsp. melted butter, or more as needed

Instructions
 

  • Clean oyster mushrooms and remove bottom of stems. Place onto baking paper in baking tray – stems up. Then, brush each mushroom with melted butter on all sides.
  • In a small bowl, combine freshly grated parmesan cheese and breadcrumbs. Mix well. With a spoon distribute mixture onto each mushroom to cover it with breadcrumbs-parmesan mix on all sides.
  • Bake in preheated oven (190C/374F) for about 10-15 minutes – until golden. Serve immediately.
