Today we will be making a quick one – baked oyster mushrooms, the Mediterranean way. These Parmesan goodies are suitable as appetizer or side dish to meats and fish. We particularly enjoy them alongside my kid’s favorite meatloaf cakes – Mini Meatloaf cakes with eggs recipe.

Ingredients and Substitutions

  • Oyster mushrooms – regular variety, sold in most stores (at least across Europe)
  • Butter – melted, or substitute with olive oil
  • Parmesan cheese – freshly grated tastes best, if possible from Italy – Reggiano D.O.P
  • Breadcrumbs– fine breadcrumbs or gluten free if needed

Pearl oyster mushrooms are native to Central Europe. They grow in clusters. Due to the rising demands of the market, they are grown for commercial consumption and sold in large supermarkets.
