Quick Kefir Yogurt Pancakes (Oladyi na kefire)

Quick Kefir Pancakes with frozen wild blueberries – a simple variation of the traditional Russian pancakes (Oladyi), but prepared with plain Kefir Yogurt (Оладьи на кефире) and frozen wild blueberries. Super fluffy and delicious, these pancakes are perfect for breakfast, brunch or as on-the-go snack.

Fluffy Kefir Pancakes with wild blueberries

Fluffy, delicious, and super quick pancakes made with kefir yogurt and frozen wild blueberries! These easy pancakes are similar to Russian and Ukrainian oladyi (or oladi), which are usually made with milk or even buttermilk in modern times.

In Slavic cooking, “oladyi” can mean any kind of small pancakes or fritters, whether sweet or savory. They can also include ingredients like raisins, apples or even bananas. Traditionally topped with honey, jam or smetana (sour cream) these easy breakfast pancakes disappear from the plate even before I’m ready making the whole batch.

Ingredients and Substitutions

  1. Kefir Yogurt – a thick kefir should be used
  2. Flour – all purpose flour, type 00 Italian flour or whole wheat flour can be used
  3. Baking soda – or baking powder
  4. Egg – one medium
  5. Wild blueberries – small wild frozen blueberries are best, or fresh wild blueberries. Frozen crushed raspberries can be used too

How to cook Kefir Pancakes?

1st: Whisk the kefir yogurt and baking soda together. Add in the egg and then flour & blueberries.

2nd: Preheat the frying pan and grease with oil or butter. Pour over batter into small pancakes and cook on both sides. Stack on top of one another and enjoy.

What is the difference between Kefir and Yogurt?

Kefir and yogurt are both fermented dairy products, but kefir is traditionally made with both bacteria and yeast. whereas plain Yogurt is made with starter culture only (think gut-friendly bacteria). Kefir has a thin, drinkable texture, while yogurt is thick and easy to eat with a spoon. Since kefir ferments longer, it has a tangier taste and less lactose compared to plain Yogurt. Both are commonly used in cooking, baking, or enjoyed on their own. In short, think of kefir as a tangier, drinkable version of yogurt with a unique flavor and texture similar to ayran.

Fluffy Kefir Pancakes with wild blueberries, called oladyi or oladi with kefir- delicious and super quick kefir pancakes that everyone will love.

Equipment

  • 1 cooking pan, non-stick

Ingredients

  • 250 ml kefir yogurt, should be thick
  • 120 g white flour, like type 00 Italian
  • 1 medium egg
  • 6 tbsp. frozen wild blueberries
  • pinch baking soda
  • vegetable oil or butter for the pan

Instructions

  • Pour kefir yogurt in a large bowl and sprinkle the baking soda on top. Give it a good stir until kefir gets slightly bubbly.
  • Next, add in the egg and beat with the kefir. Add flour and incorporate well. Then, add in the frozen blueberries and let sit aside until the pan heats up.
  • Finally, once your pan has heated up, reduce the heat to medium and add in a tiny bit of oil/butter (to cover pan's bottom).
  • Pour some of the pancake mixture and cook on both sides until golden. Repeat for the rest of the batter. Stack pancakes one over the other and serve with favorite topping.

Notes

PAN: I use non-stick pan with ceramic coating which sometimes makes food stick (yup even if non-stick). To prevent pancakes from sticking to pan I always add some vegetable oil or butter before adding the new batch to the pan. That also gives them an extra crisp on the outside, especially when butter is used.
PANCAKE SIZE: Russian pancakes are rather small in size, compared to American for example. Therefore, they would take approx. 1/3 to 1/4 of the frying pan. Sometimes I make them even smaller and manage to make 3 pancakes in a 24 cm pan/9 inch/.
BLUEBERRIES: I prefer frozen wild blueberries, as they are smaller in size and easier for cooking. Not to mention more delicious. Pancakes can be prepared with fresh blueberries as well. Or crushed frozen raspberries too.
VARIATIONS: Buttermilk can be used instead of kefir yogurt, or baking powder instead of baking soda.
KEFIR MILK: Kefir yogurt should be thick and bubbly, however different brand have various preparations of kefir. So, if your kefir is somewhat water-y, some more flour could be beneficial. the goal is to have a thick but still easy to pour in the pan batter.
