One Pan Turkey Breast in Cheese Sauce (30 min)

One pan (boneless) turkey breast dinner in mascarpone cheese sauce – spiced with onions and dill. Prepared in one pan on the stove, this easy dinner recipe is ready in 30 minutes (or less). Wild turkey breast can be used too.

On today’s menu we have a easy recipe using boneless turkey breast in creamy mascarpone sauce with a hint of fresh herbs. It’s a quick recipe, where you’d need only a stove top and a cooking pan. it can easily be paired with a vegetable side or rice. I like to make in on weekdays when we crave something freshly cooked, but fast.


  • Boneless turkey breast , cut in cubes – store bought, home raised or wild. substitute with chicken as needed
  • Mascarpone cheese – or heavy cream works too
  • Spring onion – or other type of onion
  • Dill, fresh
  • Flour (all purpose)
  • Salt
  • Black cayenne pepper (or to taste)
  • Olive oil
  • Water/broth (or more as needed)

How to cook turkey breast with cheese sauce?

1st: Sauté meat in olive oil, then sauté onions as well. Add flour and some water/broth to thicken.

2nd: Add remaining ingredients and simmer under a lid on very low heat until sauce thickens. Serve with a side of choice.

  • 400 g (14oz) boneless turkey breast cut in
  • 40 g (3-4 tbsp.) mascarpone cheese
  • 1/2 cup spring onion, finely minced
  • 2 tbsp. dill, fresh
  • 2 tbsp flour (all purpose)
  • 1 tsp salt (or to taste)
  • 1 tsp black cayenne pepper (or to taste)
  • 2 tbsp olive oil
  • 200 ml (1 cup) water/broth (or more as needed)


  • Cut boneless turkey breast in small cubes (pieces). In a large saucepan add olive oil and sauté turkey breast on stove top until it changes color (on medium to low heat). Use a lid to preserve the natural flavor of meat.
  • Next, add minced spring onion and sauté further until soft.
  • Then, add flour and mix well for a few seconds. Add mascarpone cheese, salt & pepper and water. Stir until mascarpone cheese dissolves completely.
  • Simmer for 15 min (or until meat is cooked) on low heat to discourage curdling. Cover sauce pan with lid during cooking.
  • Add chopped dill, salt and pepper 5 minutes before removing from stove top. Serve hot with a side of choice.


  • If you use broth make sure to adjust salt content accordingly. 
  • Adjust thickness by adding more/less flour or water.
