No fry Turkish Borek (Börek) Recipe -Lovely, savory pastry from the Middle Eastern/Mediterranean cuisine. Prepared with crispy filo dough (phyllo dough), layered with creamy Feta cheese, eggs and Yogurt, these ‘sigara boreks’ are ideal for breakfast, brunch, celebrations and parties.

This lovely Turkish Borek recipe is perfect for breakfast, brunch, large parties and family celebrations. It’s quick and easy to make, plus it delivers incredible Mediterranean taste. Making these kid-friendly savory pastries is super easy and fun. My kids love to brush the sheets with the Greek Yogurt mix. Well, they love to eat them at the end too.

Best Turkish Borek (Börek) – Recipe ingredients:

  • 300 g Feta cheese (or white cheese) – any type of white cheese that is firm works great
  • 4 eggs, medium to large
  • 150 g plain Greek Yogurt – true, unflavored Greek yogurt or one you prepared yourselves is best
  • 30 g butter, melted – needs to be like a liquid
  • 30 g olive oil
  • a few tbsp. of water as needed
  • 20-25 triangle phyllo (filo) sheets – see photos below. These triangle Turkish phyllo sheets are also suitable for frying. I try to avoid fried foods, so I bake them instead. They turn perfect every time.

How to make Turkish Borek (Börek)

In a large bowl mix Feta cheese (crumbled) and eggs, beat until well combined. Then in a separate bowl combine Greek Yogurt, melted butter and olive oil – give it a good stir and set aside.

Next, brush each triangle phyllo sheet with the Greek Yogurt mix – on one side only. Add one tbsp. of the Feta mix at the widest part of the sheet. Then fold the two edges inwards, otherwise the mix will fall out during baking.

Next, roll to the other side of the phyllo sheet. Gently transfer to baking tray. Repeat for all phyllo sheets. Then, brush all boreks with the remaining Greek Yogurt mix. Add a few tbsp. of water if little to none mix remains.

Bake in preheated oven until golden and enjoy warm.

Ingredients

  • 300 g Feta cheese (or white cheese)
  • 4 eggs, medium to large

Instructions

  • In a large mixing bowl add crumbled feta cheese and beaten eggs. Mix well until combined.
  • Then, in another mixing bowl combine Greek yogurt, melted butter, olive oil and mix. Brush each triangle phyllo sheet with the mix on one side only.
  • Next, add a tbsp. of the Feta-Egg mix at the widest part of the filo sheet. Fold the two edges inwards, then roll to the top of the sheet (see pic above). Repeat for all the rest.
  • Place all Boreks onto baking paper, then brush on top with the remaining Greek yogurt – butter mix. If not sufficient add a few tbsp. of water to the bowl of Yogurt.
  • Bake in preheated oven (180C/360F) with fan for about 15-20 minutes or until Borek becomes golden and puffy. Enjoy while warm.
