Behind the Bites
Popsicles are popular in Europe, though they go by various names and have slightly different cultural significance depending on the country. It is believed that popsicles were invented in 1905 in the U.S. by 11-year-old Frank Epperson, who accidentally created the frozen treat and later patented it as the “Epsicle,” then renamed “Popsicle.”
Popsicles gained popularity in Europe after World War II, particularly during the 1950s and 60s, as American food culture spread across the continent. European countries soon developed their own versions using local fruits, flavors, and ingredients, resulting in a variety of unique frozen treats that often included real juice, yogurt, or cream.
Growing up, there weren’t many popsicle brands around, but the homemade creamy ice cream sold on my way to school was an all-time favorite. I used to dream of one day owning one of those big ice cream machines myself. Yeah good times.
Ingredients and Substitutions
- Berries – fresh or frozen raspberries, strawberries or blueberries.
- Mascarpone cheese – gives popsicles that creaminess.
- Sugar
- Cookies/Biscuits – I use French butter biscuits, called Petite Beurre, but any type of Oreo cookie (without the cream) can be used.

1st: In a sauce pan combine berries and sugar and let cook on low heat until sugar dissolves.
