Easy Mediterranean Spanish Chorizo quiche recipe

When summer heat hits, we naturally look for easier, lighter meals that do not require hours long preparation time in a hot kitchen. So, today I’m sharing our family’s quick quiche recipe, that is heavily favored by one of my kids.

We make the filling with Spanish chorizo, or salami or even any deli meat I have lingering in the fridge. If you keep the proportions, the recipe is pretty versatile, which makes it a firm favorite in my cookbooks.

COMBINE this quiche with my olive oil pie crust base (that is secretly perfect as a quiche base as well). Plus super simple to make at home, it takes me 5 minutes (when using the stand mixer).

Behind the Bites

Rumor has it Chorizo originated on the Iberian Peninsula (Spain and Portugal). Early forms of preserved sausages existed for centuries as a way to keep meat edible before refrigeration. Modern chorizo developed after paprika (pimentón) arrived from the Americas in the 16th/17th centuries, giving it its famous red color and smoky flavor.

Over time, Spanish colonization spread chorizo to Latin America, where local versions such as Mexican chorizo evolved with different spices and preparation styles. Today, Spanish chorizo is usually cured and smoked, while Mexican chorizo is commonly sold fresh and must be cooked.
