Instant Pot Beef (Cow) Tongue

Melt-in-your-mouth beef (cow) tongue (Lengua in Spanish) prepared in Instant Pot (pressure cooker). Easy, basic recipe for a quick hands-free meal that can be enjoyed as appetizer or main masterpiece.

Beef / cow tongue in pressure cooker or instant pot recipe

Today we are making a lovely meal – beef (cow) tongue (or lengua in Spanish cuisine). Eating animals head-to-toe has its historic significance in many European countries. Up to this day many Europeans, including myself, enjoy eating beef tongue in a variety of ways. Sometimes sautéed in butter, other times with horseradish sauce or braised in tomato sauce. Always delicious, if you are a fan of the taste. My grandpa’s favorite meal was boiled tongue with potatoes on the side. As simple as that.

In the past, my grandparents used to simply boil tongue in water on the stovetop for multiple hours at a time. Today, I prepare it in my Instant Pot pro – to make life a bit easier (and quicker). Ingredients and Substitutions

  1. Beef tongue – fresh or frozen. If frozen thaw overnight in the fridge before cooking in pressure cooker.
  2. Onion – for taste
  3. Carrots – for taste
  4. Seasoning: bay leaves, black pepper
  5. Water for Instant Pot – should cover tongue completely

How to cook beef tongue in IP/pressure cooker?

1st: Place beef tongue and all ingredients in IP pot. Pressure cook and let natural release of steam.

2nd: Remove tongue from water and let cool. Peel skin off and enjoy as is, or use for another meal.

What to serve with beef tongue?

I prefer to serve it with a vegetable side or a simple salad. Here are a few suggestions from my kitchen:

Instant Pot Beef (Cow) Tongue

The European Dish
Delicious beef (cow) tongue prepared simply in an Instant Pot (pressure cooker). An excellent base for buttered beef tongue or any other tongue recipe.
Prep Time 10 minutes
Cook Time 50 minutes
Pressure release 15 minutes
Total Time 1 hour 15 minutes

  • 1 Pressure cooker (Instant pot)


  • 1 kg (approx. 2 pounds) beef (cow) tongue
  • 1 carrot, chopped
  • 1 onion, chopped
  • 3 bay leaves
  • handful of black peppercorns


  • At the bottom of IP/pressure cooker pot add beef tongue, chopped carrot & onion. Then, add bay leaves and black peppercorns and cover with water. Tongue should be completely submerged in water. Take care not to exceed pot's limit.
  • Next, close the lid, set timer on custom and PRESSURE COOK for 50 minutes. Allow natural release of steam (approx. 15 minutes in my IP.
  • Remove tongue from water and let cool. Peel skin off and enjoy as is or in a separate meal.


  • Preserve in air-tight container up to 24 hours in the fridge.
  • Can be prepared with pork tongue or sheep tongue too. Cooking times may vary. 
  • Where you source your meat from may have impact on cooking time and taste of the meal. 
  • If cooking with heavier tongue (more than 1 kg/2 pounds) you may need to increase pressure cook time to 60-80 minutes depending on size.
