Behind the Bites

A dough made with plain yogurt is a staple across Bulgaria. For generations, it has been used to prepare the beloved Mekitsa—a traditional Bulgarian fried bread often enjoyed for breakfast. In recent years, home cooks have also started using this versatile dough to make pizzas and small buns.

The dough is traditionally made with Bulgarian plain yogurt, which has a noticeably tangier flavor compared to, for example, plain Greek yogurt. However, in recent years, many commercial Bulgarian yogurt brands have begun offering varieties with a more neutral taste—still without any added sweeteners.

Bulgarian yogurt, known locally as kiselo mlyako (кисело мляко), is a traditional fermented dairy product beloved by many. What sets Bulgarian yogurt apart is the use of a specific combination of live bacterial strains—Lactobacillus bulgaricus and Streptococcus thermophilus. These two work symbiotically to give the yogurt its distinctive tangy flavor and smooth, creamy texture.

Ingredients and Substitutions

  1. All purpose flour – depending on the type and brand of flour you may need to adjust quantities a bit
  2. Plain Yogurt – plain Greek Yogurt or Bulgarian Yogurt work best (approx. 3.6% fat content)
  3. Egg
  4. Warm water – helps the yeast activate quicker
  5. Instant dry yeast – or if you have it, use fresh yeast cube as well
  6. Pinch of sea salt and sugar
