A few suggestions from my kitchen:

Greek Mushroom Sauce (σάλτσα μανιταριών)
Ingredients
- 300 g white button mushrooms, cleaned and chopped
- 1 large white onion, minced
- 200 ml cooking cream
- 2 tbsp. butter
Seasoning:
- 1 tbsp. oregano, dried
- 1 tbsp. wild garlic leaves, minced
- 1 tsp. cumin powder
- pinch of nutmeg
Instructions
- First, in a large sauce pan add minced onion and sauté for 2-3 minutes in butter on medium heat. Stir frequently to prevent burns.
- When onion is soft and translucent, add cleaned and cut mushrooms. Sauté further for 10 minutes (or until mushrooms are cooked). Add a tbsp. of water or more butter if mushrooms start to dry out.
- Next, remove sauce pan from stove and add in the cooking cream. Sprinkle the seasoning ingredients and combine well.
- Return the sauce pan on the stove and cook on low for another 5 to 10 minutes. Stir frequently.
- Finally, taste test and adjust seasoning if needed. Use for steak, chicken, pasta or ravioli dishes.
