French Savory Loaf Cake (Gâteau salé)

Today we are making a French classic that probably all French home cooks have a version of in their carnet de recettes (meaning recipe notebooks).

FUN FACTS: The now popular versions of cake salé made it’s way into modern French cuisine many years ago. In the early days, savory cakes were often made in rural areas using leftover ingredients. They were a way to avoid food waste and create a hearty, nutritious meals that kept well.

Traditional ingredients for French savory cake include a base of flour, eggs, and milk, with the addition of cheese, ham, olives, vegetables, and herbs. Over time, regional variations emerged featuring dried tomatoes, camembert cheese and so forth.

Once you get the base right, the rest is just for better taste or managing food waste. I bet this cake is an excellent way to use up leftover chicken or other ingredients too.

Ingredients and Substitutions

  1. Flour – all purpose unbleached white flour is needed
  2. Milk – cow’s milk approx. 2-4% fat will do
  3. Olive oil – or other vegetable oil or butter
  4. Eggs
  5. Baking powder
  6. Additions: Feta Cheese, Ham, Green Olives, Estragon, Nutmeg, pinch of salt

NOTE: You can add basically everything to this recipe and combine it the way it tastes best to you. For example, I sometimes add shredded zucchini, sun dried tomatoes, rosemary, chorizo or walnuts to the mix. Well, not all at once, but selectively.

How to cook savory cake?

1st: Beat eggs with hand mixer, add remaining ingredients.

2nd: Place into greased loaf pan and bake until toothpick comes out clean.

What to serve with French Savory Cake?

French Savory cake is served on it’s own or with a drink like tea or dessert of choice to make life sweeter afterwards. Here are some ideas:

Ingredients
  

  • 3 eggs, medium size
  • 50 ml (1/4 US cup) olive oil, extra virgin
  • 170 ml (2/3 US cups) milk
  • 150 g (1, 1/8 US cups) all purpose white flour
  • 1/2 tbsp. baking powder
  • 100 g (1 US cup) Feta cheese crumbled
  • 50 g (1/2 US cup) green olives pitted and cut
  • 50 g (1/2 US cup) ham chopped
  • 1 pinch of salt
  • oil/butter for greasing pan

Instructions
 

  • In a large mixing bowl beat eggs to get them double their size (approx. 4 minutes on high speed). Then, add olive oil and milk and incorporate on low speed.
  • Next, add flour and baking powder, incorporate on low speed. Lastly, add Feta cheese, ham and olives. Mix well.
  • Grease a 9 inch/23 cm loaf pan with oil/butter. Alternatively, line up with baking paper. Bake in preheated oven on 180C/360F for about 40 minutes, or until toothpick comes out clean.
  • Let cool and slice up. Enjoy!

Notes

  • Substitutions: olive oil can be substituted with melted butter and all purpose flour with type 00 Italian flour
  • US cup measures are indicative and based on online conversion tools 
  • Cover savory cake with baking paper during baking, if needed, to prevent upper layer from burning.
