French Green Beans Potato Salad (30 min)

French Green Beans potato salad with fresh tomatoes, olive oil and Dijon mustard. A cold salad recipe from the French side of my family. Vegan, gluten free and ready in 30 minutes.

Today we will be making a family recipe for a simple cold salad with green beans, potatoes, tomatoes – spiced up by Dijon mustard and garlic. This recipe has been handed down generations from the French side of the family – and now I’d like to share it with you.

Ingredients and Substitutions

  1. Potatoes – old potatoes is best, boiled and cut
  2. Fine green beans – from a can or preboiled.
  3. Fresh tomatoes
  4. Garlic – finely minced
  5. Olive oil
  6. Dijon mustard
  7. Salt to taste
  8. Vinegar – or substitute with freshly squeezed lemon juice.
  9. Fresh parsley, for garnish

How to cook green beans potato salad?

1st: Boil potatoes with skin on, peel and cut. Cut tomatoes and parsley and mix in a salad bowl.

2nd: Prepare the dressing in a separate bowl and then incorporate well with the veggies. Serve.

What are French green beans?

French green beans, also known as ”haricots verts” (pronounced “ah-ree-koh vair”), are a specific type of green bean that is longer, thinner, and more tender than traditional green beans. They are typically harvested when they are very young and slender.

Unlike traditional green beans, French green beans do not have a string running down the seam of the pod, which makes them easier to prepare and eat. I usually buy canned baby French green beans from Carrefour market. They are ideal for this salad.

Family recipe for a French cold salad with green beans, potatoes, tomatoes. Spiced up with Dijon mustard, garlic and olive oil this salad is a keeper.

  • 3 medium potatoes, boiled
  • 1 can (7 oz/ 200g) fine French green beans, thin and long
  • 2 medium tomatoes, chopped
  • 1 tbsp. chopped parsley


  • 1 tsp. Dijon mustard
  • 6 tbsp. olive oil, or more as needed
  • 1 cloves of garlic, minced
  • 1 tsp. apple cider vinegar/lemon juice
  • salt to taste


  • Boil potatoes on low het until cooked (with skin on). Peel and cut in small pieces. Chop tomatoes and parsley as well.
  • In a large salad bowl mix with chopped boiled potatoes and drained green beans.
  • In a separate bowl mix Dijon mustard, olive oil, minced garlic, vinegar and salt. Stir well to combine. Add to salad bowl and mix everything together. Serve.
