Easy Turkish Delight Cookies

Today we are making the perfect easy cookies that feature Turkish Delight. Ever wondered how to use Turkish Delight except eat it straight from the box? Well, Bulgarians got you covered. These traditional ‘Lokumki” (meaning cookies with Turkish Delight) are still enjoyed the weeks before Christmas and New Years Eve as part of the Lent period.

They are sweet and buttery, yet they are completely egg-free, milk-free, butter-free. No animal products are used to make the perfect Lent Cookies, yet you cannot stop eating them. Their ease of preparation, soft & buttery texture and exceptional durability make them perfect for gifting too. They can keep up to 3-4 weeks, although I doubt they would last that long if you tried them.

Behind the Bites

In Bulgaria, ‘lokumka‘ refers to a traditional sweet treat made with Turkish delight as its key ingredient. These cookies typically feature a piece of Turkish delight wrapped in a soft, crumbly dough, often dusted with powdered sugar. These cookies are popular in Bulgaria for their delightful combination of a buttery, melt-in-your-mouth texture and the chewy, sweet burst from the Turkish delight filling. Lokumka is enjoyed as a special treat, especially during holidays or festive occasions, blending local flavors with a touch of Turkish influence. There are many versions of ‘Lokumki’ – some require animal products, but most do not.

Rustic Turkish Delight Cookies

The European Dish
Rustic Turkish Delight cookies recipe – durable treats, that are perfect for gifting or enjoying over time. Delicious and simple, these cookies are ideal for Lent too. Kid-approved, vegan.

Equipment

Ingredients

  • 150 ml vegetable oil, (sunflower, olive oil, ect.)
  • 200 ml cold water
  • 500 g white flour, all purpose
  • 1 tbsp. instant dry yeast, leveled
  • 300 g Turkish Delight, cut in small cubes
  • powdered sugar for rolling cookies in

Instructions

  • In a large mixing bowl combine vegetable oil & water and mix well. Add flour and dry yeast. Knead a soft, oily and stretchy dough.
  • Roll out the dough into a thin square. Then cut lengthwise into ribbons, divide those ribbons into small rectangular pieces.
  • Next, place small Turkish delight pieces at one side of each rectangle and roll inwards – one and a half full rolls around the Turkish delight as a minimum.
  • Place each cookie onto baking tray covered with baking paper with some space in between.
  • Bake in preheated oven for about 10-15 minutes. Cookies should be pink, not brown when you remove them from the oven.
  • Immediately roll all cookies into powdered sugar. Let to cool completely and enjoy. Keep up to 3 weeks in air-tight container.

Notes

DOUGH: The dough should be soft, oily and easy to work with and roll out but also stretchy. It takes time to incorporate the oil into the dough. Depending on the type of flour  (brand even) used, you may need to adjust flour-water ratio slightly.
TURKISH DELIGHT: I’m using store-bought plain pink Turkish delight that comes in larger chunks. I cut it to fit into 60 cookies evenly.
YEAST: The dough should now rise ( you read that right). The yeast is used to help the dough rise slightly (but not too much) during baking only. Fresh yeast can be used too.
