Soft, spongy, delicious all these words are well suited to describe this unique beer bread recipe. The texture is rich, the aroma slightly reminds you of beer (but my kids liked it) – it’s perfect for toasts, breakfast and on the side with a main meal (like this super easy braised beef on stove recipe).

BEER BREAD – Ingredients & Substitutions

  • Dark beer – from a can or bottle, if you have light beer, that works too.
  • Fresh yeast – personally I prefer fresh vs. dry yeast as the bread becomes even more fluffy and soft. However, if you cannot source fresh, use dry – the result will be really good.
  • Brown sugar – used to activate the yeast, you can substitute with honey
  • White all purpose flour – you can use, type 00 too, please use unbleached if possible
  • Whole wheat (or rye) flour – gives it that extra kick
  • Chopped walnuts – go perfectly well with the slight beer aroma. Use hazelnuts or almonds if you do not have walnuts.
  • Dried mint, optional – adding mint is totally optional, however in my view it pairs perfectly with the walnuts. You can use any other seasoning of choice – like rosemary or thyme.
  • Salt, optional – if you’d like you can add a pinch of salt

How to make beer bread – Step – by -step

In a large mixing bowl add beer, yeast and sugar (honey). Let yeast dissolve and start bubbling. that means it’s activated. Then add remaining ingredients and knead a soft dough. Let rise for 20 minutes in warm place (until it doubles size). Then transfer to loaf pan and let rise again. Bake in preheated oven on 180C/360F until slightly golden. Check with toothpick if bread is done.

Ingredients

  • 330 ml dark beer
  • 15 g fresh yeast (or 10 g dry yeast)
  • 1 tsp brown sugar (or honey)
  • 500 g white all purpose flour
  • 250 g whole wheat (or rye) flour
  • 50 g chopped walnuts (or hazelnuts)
  • 1 tsp. dried mint, optional
  • 1 tsp. salt, optional

Instructions

  • In a large mixing bowl add dark beer, sugar (honey) and yeast. Mix well and let yeast activate (gets bubbly). Usually around 5 minutes in room temperature.
  • Then add white flour, whole wheat flour, chopped walnuts, mint and salt. Mix by hand or in bread machine/robot to get a soft, non-stick dough. Cover with a cloth and let dough rise. Then transfer to standard loaf pan (9×5), covered with baking paper and let rise again*.
  • Bake in preheated oven (180C/360F) for about 40 minutes (or as needed – check with toothpick). Alternatively bake in bread machine according to universal program.

*  The bread can rise only once if you are short on time. Simply transfer to loaf pan directly and let rise there. Then bake. 
* Depending on the brand of flour you use and where you are in the world ingredient quantities may require slight adjustments.
