Creamy Swedish Shrimp Salad (Skagenröra)

Creamy Swedish Shrimp Salad (Skagenröra) – beloved Swedish seafood dish, popular as a starter or topping for various breads and dishes. Often served on called Toast Skagen, with rye crackers, as filling (for sandwiches or wraps), over potatoes or simply as a salad.

Creamy Swedish Shrimp Salad (Skagenröra)

Today we are preparing a beloved Swedish seafood dish that might become your favorite. It’s really addictive if you like shrimp in all shapes and sizes. The fun part is, it’s pretty easy to make if you have some cooked and cleaned shrimp in the fridge (or freezer). As I get my shrimps from Lidl (mainly), they are always frozen. I defrost them either overnight in the fridge or on the stove top for a few minutes on medium heat and under a lid.

FUN FACTS: The dish was named after the Danish fishing town Skagen – the northernmost point of Denmark. It became popular in the mid-20th century, and is especially associated with summer dining and Midsummer celebrations.

Ingredients and Substitutions:

  1. Shrimp – precooked, peeled small or large shrimps (similar to this one)
  2. Mayonnaise – this is the one I use
  3. Sour Cream – can be substituted with creme fraiche and mayo as well
  4. Fresh dill – dried can be used too, however taste will not be the same
  5. Lemon juice – fresh, lemon zest can be added too
  6. Salt and pepper – to taste

NOTE: Optional ingredients would be shallots and chives.

How to make Skagenröra?

1st: Prepare the shrimps – by thawing if frozen, cutting and straining from excess water. Transfer to salad bowl.

2nd: Mince fresh dill, lemon juice, sour cream and mayonnaise. Mix well, season with salt and pepper and serve. Voila!

What to serve with it?

Traditionally, Skagenröra is served over a (butter) toast (like Toast Skagen), rye bread, over baked potatoes and in wraps and sandwiches. Here are a few suggestions from my kitchen:

Creamy Swedish Shrimp Salad (Skagenröra) – a quick and delicious Scandinavian delicacy that is served over crackers, on toast or as a filling.

Equipment

  • 1 cutting board and knife
  • 1 large salad bowl

Ingredients

  • 400 g shrimp, precooked and peeled
  • 1 tbsp. mayonnaise, heaping
  • 1 tbsp. sour cream, heaping
  • 3 tbsp. fresh dill, minced
  • 1 tbsp. lemon juice
  • sea salt and white pepper to taste

Instructions

  • Prepare Shrimp: Place precooked (boiled)* and cleaned shrimp onto cutting board and dice well. Transfer to salad bowl.
  • Mince the fresh dill finely and add to the salad bowl as well.
  • Combine Salad: Add lemon juice, mayonnaise, sour cream to the salad and mix in with the shrimp and dill. Season with salt and pepper to taste and serve.

Notes

SHRIMP: All types of good quality precooked shrimp works.
If using frozen shrimp (precooked and cleaned), I’ll add it to a pan and defrost it on the stove top for 5 minutes. Any excess water should be removed.
MEAL-PREP: Salad can be made up to 12 hours in advance and stored in air-tight container in the fridge.
VARIATIONS: Sour cream can be replaced with crème fraîche. Finely minced shallots or chives can be added too. A fish roe (like löjrom) can be placed on top when serving Toast Skagen.
