Cheese Breadsticks (Grissini) Recipe

Easy Grissini (breadsticks) recipe with cheese and aromatic Mediterranean herbs. These breadsticks contain no baking powder/soda or yeast. Homemade Mediterranean Grissini (Breadsticks) Recipe

Sometimes the simplest of recipes bring the most joy. Especially when they are made at home with quality ingredients. I do not mean to brag, but I’m sure these homemade cheese breadsticks are better than the usual olive garden breadsticks, or even pizza hut breadsticks. Making these cheesy delicious breadsticks at home is a breeze. They are prefect as appetizer or snack during family gathering, games night or just hanging out with family & friends.

My children love to eat them as afternoon snack or when we travel long distances in the car. They are particularly easy to grab with a small hand.

Legend has it, homemade breadsticks (or otherwise called Grissini in Italian or kritsinia in Greek ) originate from a region northwest Italy, called Piedmont. However, they are extremely popular on the Mediterranean basin and across Europe as a whole. You can see grissini breadsticks being sold in many Greek bakeries and tavernas. Sometimes, topped with sesame seeds or covered with semi-sweet pomegranate molasses.

How to make homemade breadsticks (grissini):

  • In a large bowl combine all ingredients. With hands (or kitchen robot) knead soft, slightly sticky dough.
  • Next, on a floured surface place the dough and make small balls (20-24 balls).
  • Roll out each ball with your hands and place onto non-stick baking dish. Bake in preheated oven for about 25 minutes (180C/360F) or until golden. Enjoy warm.

Ingredients

  • 100 g yellow cheese, like cheddar, shredded
  • 50 g parmesan cheese
  • 20 g melted butter
  • 180 g Greek Yogurt, plain
  • 1 tsp baking soda
  • 1 egg, medium size
  • 1 tbsp oregano
  • 1 tbsp thyme
  • 1 tsp cumin
  • 80 g spelt flour
  • 200 g white flour, all purpose flour or type 00

Instructions

  • In a large bowl combine all ingredients. With hands (or kitchen robot) knead soft, slightly sticky dough.
  • Next, on a floured surface place the dough and make small balls (20-24 balls).
  • Roll out each ball with your hands and place onto non-stick baking dish. Bake in preheated oven for about 25 minutes (180C/360F) or until golden. Enjoy warm.

Recipe Notes

Reheat in the microwave for a few seconds to enjoy warm. 
Keep in air tight container for up to 48 hours in the fridge.
