An easy, quick and (almost) hands-free dinner recipe with chicken and sweet yellow tomato sauce. Even the picky eaters might appreciate it. I know mine do.

Ingredients & Substitutions

  1. Boneless (skinless) chicken thighs – or bone in and skin on thighs work too.
  2. Yellow tomato sauce – I always use jarred yellow cherry tomato sauce from the near by Italian store.
  3. Fresh spring onions
  4. Olive oil – or any vegetable oil
  5. Spices: Salt, white pepper and cumin

NOTE: Yellow cherry tomato sauce isn’t like regular tomato sauce – it’s sweet almost like you are not even eating tomatoes. Perfect for my no-tomato sauce eating kids.

How to cook

1st: Sauté onions on the stove top, add spices and yellow tomato sauce.

2nd: place chicken in baking dish with lid ( I use glass baking dish) and cover with tomato sauce. Bake and serve with a side.

NOTE: I use glass baking dish with lid as a non-toxic cooking option, that bdw. is a popular choice across European countries.

Chicken Thighs in Yellow Tomato Sauce

The European Dish
Simple Italian-style baked chicken thighs in sweet yellow cherry tomato sauce, spiced up with spring onions and herbs.

  • 1 cooking dish with lid (e.g. glass or ceramic)


  • 4 skinless boneless chicken thighs, medium size
  • 250 ml yellow cherry tomato sauce
  • 4 tbsp. butter
  • 1 cup ( bunch) spring onions, finely minced
  • 1 large yellow onion, chopped
  • 1 tbsp. oregano, fresh/dried
  • salt and black pepper to taste
  • pinch of nutmeg


  • In a large cooking dish with lid add butter, chopped spring onions and yellow onions and sauté on the stove on low heat.
  • Next, add yellow tomato sauce and all spices/seasoning. Stir well and set aside.
  • In a baking dish (with lid) add boneless chicken thighs, cover with the yellow tomato sauce.
  • Place the lid on and bake until fully cooked on 180C/360F in the oven (approx. 20-25 min in mine). Serve with a favorite side.


If using chicken with skin on, first brown chicken in butter on the stove for a few minutes on both sides and set aside. Then, continue with making the tomato sauce and baking afterwards.
