Best strawberry lemon sorbet in the ninja creami ever - from frozen strawberries

One of the many joys of having kids is being able to enjoy sweet, icy treats completely guilt-free. Sometimes that means ice cream every single day during summer break – and occasionally on any other day we feel like it.

As many of you know, I try to steer clear of highly processed foods and focus on serving my family real, nourishing ingredients, so daily store-bought ice cream has never really been an option. Until now, I’ve relied on all kinds of homemade popsicles, but apparently even those can lose their appeal after a while.

Although we were a little late to the Ninja Creami craze – as I usually am – we eventually gave in and got one as a gift for the kids (naturally!). Form all the Ninja Creami desserts we made so far (and those were plenty) the strawberry sorbet wins every single time.

Ingredients and Substitutions

  1. A pack of frozen strawberries – fresh can work too
  2. Brown sugar – or honey, maple syrup or agave syrup
  3. Lemon juice – always best if freshly squeezed

How to make Strawberry Sorbet (frozen fruit)?

1st: Combine the frozen strawberries in sauce pan together with the sugar and lemon juice. Let simmer until fruit gets soft.

2nd: Let strawberries cool down, then transfer to the Cremi bowl and puree with an immersion blender. Freeze flat for at least 12 hours. Secure the container in the Creami and run the ‘Sorbet’ function. Serve.

Tips for making the best strawberry sorbet

Frozen fruit: slightly cooking the frozen strawberries on the stove top with the sugar and lemon juice brings out the flavor of strawberries even better.

Leave it on the counter: Leaving the container on the counter for about 5 minutes and/or running it under hot water on the sides for a few seconds before spinning, gives it that irresistible sorbet texture.

What if it looks crumbly? If after the 1st run on the sorbet function the strawberries look a bit crumbly, hit the re-spin button or leave the sorbet for 5 more minutes on the counter. It should do the trick.

Equipment

  • 1 Ninja Creami Ice Cream maker
  • 1 Immersion blender, optional
  • 1 sauce pan with lid and spatula

Ingredients

  • 400 g frozen strawberries
  • 3 tbsp. brown sugar, liquid
  • 1 tbsp. lemon juice

Instructions

  • First, transfer frozen strawberries in a large sauce pan. Sprinkle with sugar and lemon juice and stir.
  • Place onto a stove top and on low heat let strawberries soften and blend in with the melted sugar. Remove from stove when strawberries are soft. Stir as needed.
  • Transfer into the Ninja Creami container when strawberries have cooled down a bit. Blend with immersion blender and cover with the lid.
  • Freeze for up to 24 hours or until strawberries are frozen solid. Then, leave the container for 5-10 minutes on the counter. Run the container under hot water on the sides for a few seconds.
  • Secure the container in the Ninja Creami and run the Sorbet settings. If the sorbet looks a bit crumbly, re-spin the sorbet. Scoop and serve.

Notes

SUGAR: Sugar can be replaced with honey or maple syrup;
TIPS: Running the container under hot water on the sides helps defrost the edges. Leaving the container on the counter for about 5-10 minutes helps with the texture of the sorbet and reduces the need for re-spins.
